thoughts.


everyone has a release, something they do to take themselves out of the present moment and just become free. you have one. that thing that keeps you sane when you are surrounded by insanity. or maybe it's something to allow yourself to go a little insane when your surrounded by too much sanity. either way it's comforting to know you can escape. 

that is why i love to write. i love to create stories and characters that are so complex even i question their actions. i love knowing that i can create anything and no one can tell me it's wrong, or doesn't make sense. i'm not usually one to share my characters or stories i come up with, for reasons i'm not even really sure of. but i was looking through my old writing journals and notes and thought i would share an old piece i wrote a few years ago. it's good to remember the things you love, it's good to never forget your "escape". for you never know when that "escape" of yours just might save you. happy thursday!


Distant Walker


Walking down the hallway
Walking through the crowd
I hear the people whisper
God their talking loud

I tense up my bony fingers
Squeal away the fear
How dare they try to hurt me
How they sit there with their sneers

Who do they think they are
Trying to get inside my head
Fuck their little games
My blood it still bleeds red.

I flick my flame inhale my smoke
A calmness comes over me
The chatter of the people die
My pain is finally free

But only for a moment
Before they strike again
Their comments getting louder
Their threats they soon begin

All because I’m different
Because I don’t dress the same
Could it be my slightly crooked nose?

Whatever the reason for the hate
For the gossip and my fear
I’ll stop my beat and close my eyes
Not showing up next year.

The lesson to be learned
To stop the beating bully
To have cruelty be burned.

making a list.



i don't know about all of you but i am so ready for the new year! i have learned a lot in 2012 but i have a feeling there will be bigger and better things to come in 2013. do you all make new year resolutions? i always do for the fun of it, but of course like everyone else i tend to forget or dismiss them come the second week of january. that doesn't mean i don't set goals. quite the opposite actually. i  am such a list and "write it down" kind of girl. each year on my birthday (which happens to be in january, so it works out good) i set however many goals for the age i am turning. i did this last year and to my surprise i still have the crinkled paper in my wallet with all my goals! i love the feeling when i look at it that i have crossed off the majority of my list. i have little goals such as read a new book or expand my music selections, to bigger ones such as run the st. george marathon (which i did this past fall). i think it is important to set goals so that you can better yourself with each new day. i am still trying to come up with all my goals for the new year but luckily i have some time. 

sorry things have been quiet over here in my part of the internet world. life is busy, school is hard, and work is tiring. when i opened up my browser tonight and saw my little blog on the bookmark bar i thought i would stop in and say hello. hope all is well with you fine people and remember to keep on keepin' on. until next time...

apple dippin'

there is something about fall that just makes my heart melt inside! i am quite fond of all the leaves changing, the pumpkin carving, and the george a. romero movie marathons. it's great. another thing i love is apples and caramel so to the genius who put the two and two together, thank you! although martha wouldn't approve of my apple's appearance, my family seemed to gobble them up pretty quick. happy fall!

changes.



when i first started this blog i had certain visions for it or how i wanted it to develop. as time changed so did my tastes and interests. i often look at what i post about and think, "is that what i originally had planned for this blog?" and more often than not it isn't, so i began to look closer. i began making small changes that better fit the content of this blog. i also talked with close friends whom i thank for helping me pull my ideas together. and now i am at the point of big changes. changes i am quite excited for and i hope you are as well. things are not 100% done and until they are this is about all i can tell you. times they are a changing. just wait and see.

falling into fall.

waking up this morning and walking outside to see what the day would become got me super excited. crisp air, easy to breath and the tips of leaves slightly changing. yes my friends fall is sure coming. fall is my favorite time of year so to say i get excited is an understatement. my thoughts move indoors and my mind starts racing of all the projects i can complete. this is where my racing mind doesn't come in handy. i will walk into the fabric or craft store bursting with excitement wanting to complete every project known to man. my excitement ends up overwhelming me and by the end of the season i have all the supplies but hardly any projects completed. does that ever happen to any of you? well this year is going to be different.

 i have found a collection of project and organization books that are on my to-buy list. my plan is to pick a few favorites from some of the books and create my own notebook of projects i want to complete this fall season. a goal book if you will. i'm doing this in hopes that by having a written plan i will be able to finish the projects i have been eagerly wanting to dive into. here are a few books i'm wanting to crack open.

pinching my pennies. again.

when i set a goal, or think up a plan, the "it's okay to rest" button doesn't go off in me until i have completed my goal. i like to make small term goals often so i always have an excuse to celebrate. finish a race get a new pair of shoes kind of thing. i like to make long term, harder to achieve goals as well because when i do achieve them i start to feel pretty good about life.

i think it's important for people to make and achieve goals so that they can feel the need to strive for something more than just everyday life. too often people get in a rut and seem to think that they are "supposed" to go through life with a mediocre attitude. so set goals and set them often. you will be surprised how much happier you'll start to feel.

my goal i have been working towards as of late is saving up for a new car. i find my beloved jeep is on the last few miles. i have a few wheels that have made my heart skip enough that saving will be a pretty desirable goal. do any of you have goals you are working on?

a night with friends.





over the weekend i had some friends come over for a bbq celebration. the weather was perfect with the overcast skies and cool weather on our skin. it felt perfect. after a few cobs of grilled corn and a burger (salmon for me), we were ready for some badminton and frisbee. the night was a relaxing evening to say the least. cheers to summer evenings and the smell of crackled corn on the grill. hope everyone had a good weekend!

a day of happiness.



today is blissful. i have just a moment to say hello before i am off to the job i have been waiting to hear if i got. when life hands me good news and happiness i take it for all it's worth, that way when dull moments hit i can remember that good things have happened and will happen again. it's funny how life works. always keeping you guessing, evolving you into a curious being. but of course that is what makes life exciting.

gluten free pasta








last night i tried out gluten-free pasta. i was really pleased with the outcome. i also made a killer tomato sauce by adding sauteed onions, garlic, mushrooms, basil, tomatoes and coconut oil to tomato paste and sauce. after simmering all the ingredients together i poured a generous amount onto my gluten-free pasta with a garnish of basil from the garden. 


i liked the gluten-free pasta for the light light weight feel it brought with it. it didn't feel like a heavy winter meal but rather a light fresh summertime delight. this will be a meal i'll make again.

here is a peek into my weekend. we had a few rain showers which i can never complain about when we get. i love the rain, everything is so green. besides tending to the yard i listened to great music, ate good food, and enjoyed the company of friends. i also am unsuccessfully trying to put together my grill. i find myself disregarding the instructions and trying to do it my own way. i can smell the smoked salmon now...

one of those days.


today is one of those days where the coffee isn't strong enough, the slumber wasn't long enough and the day isn't short enough. one of those days. it's always my best intentions to wake up with the right foot forward but today was different. you know one of those days where you're bugged that money doesn't grow on trees, that the bills aren't magically paid, and that life doesn't hand you a do-to list that shows you exactly what to do to be your best. for the most part these days come far and few but when they do come they let it be known. so all i can do on days like today is get up, drink my coffee and know that tomorrow won't be "one of those" days. until then, happy thursday.

whole food ice cream










ice cream is just one of the many "must have" treats for the summer, and since i was in a treat mood that is exactly what i made. i used a whole foods recipe and added in a few different things of my own. 

4 egg yolks
1/2 cup sugar (i used stevia)
1 can (13.5 ounces) can light coconut milk
1 can (13.5 ounces) can regular coconut milk
2 teaspoons vanilla extract

whisk yolks and sugar together in a large bowl until a pale yellow. add light and regular coconut milk and whisk again. 

transfer coconut mixture to a saucepan or medium pot and simmer on medium heat, stirring constantly. once it is thickened and coats the back of the spoon remove from heat and stir in vanilla. i also sprinkled in a little cinnamon and nutmeg into mine at this point. 

transfer mixture into a deep bowl and set in the fridge to chill. once chilled you can either put it into an ice cream maker or if you're like me and don't own one you can do it the old fashioned way. place contents into freezer stirring every half hour until completely frozen. mine took three mixes or about an hour and a half. 

it was so simple and quick. next time i make it i'll make it a bit more fancy and try adding in shredded coconut or fresh berries.
